For the cupcakes:
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1/2 cup buttermilk
- 1 tsp vanilla extract
For the ganache filling:
- 1/2 cup heavy cream
- 4 oz dark chocolate (chopped)
For the frosting:
- 1 cup butter (softened)
- 2 cups powdered sugar
- 1/4 cup cocoa powder
- 2 tbsp milk
Instructions
- Preheat oven: Set to 350°F (175°C). Line a muffin tin with cupcake liners.
- Mix dry ingredients: In a bowl, whisk flour, cocoa, baking soda, and salt.
- Make batter: In another bowl, mix sugar, oil, eggs, buttermilk, and vanilla. Gradually add dry ingredients.
- Bake: Fill liners ¾ full and bake for 18-20 minutes. Cool completely.
- Make ganache: Heat cream, pour over chocolate, stir until smooth. Let cool slightly.
- Fill cupcakes: Use a piping tip or knife to remove a small center of each cupcake and fill with ganache.
- Make frosting: Beat butter, powdered sugar, cocoa, and milk until fluffy. Frost cupcakes.
