Description

Doce de Leite, also known as milk caramel, is a luscious, creamy Brazilian treat made with just a few simple ingredients. Slow-cooked to perfection, it’s perfect as a dessert topping, spread, or sweet indulgence on its own. Keywords: doce de leite, milk caramel, Brazilian caramel, homemade caramel spread, dulce de leche recipe

Ingredients

  • 1 liter (4 cups) whole milk

  • 2 cups sugar

  • 1/2 teaspoon baking soda

  • 1 small cinnamon stick (optional)

Instructions

  • In a large, heavy-bottomed pot, combine the milk, sugar, and baking soda. Add the cinnamon stick if using.

  • Bring to a gentle boil over medium heat, stirring until the sugar dissolves.

  • Reduce the heat to low and simmer uncovered, stirring frequently to prevent sticking and ensure even cooking.

  • Cook for 1 to 1.5 hours, stirring more often as the mixture thickens and darkens to a rich caramel color.

  • Once thick and creamy, remove from heat, discard the cinnamon stick, and let it cool. Transfer to a jar or container for storage.

Notes

  • Stirring regularly is crucial to avoid burning.

  • The longer it cooks, the thicker and more intense the flavor becomes.

  • Store refrigerated in an airtight jar for up to 2 weeks.
