Description

This Easy Bacon & Fried Rice recipe is the ultimate quick weeknight meal! Smoky, crispy bacon combined with fluffy rice, eggs, and veggies creates a flavorful fried rice that’s sure to become a family favorite.

Ingredients

  • 4 slices bacon, chopped into small pieces

  • 2 cups cooked rice (preferably chilled, day-old rice works best)

  • 2 tablespoons soy sauce (or to taste)

  • 1 tablespoon sesame oil

  • 2 eggs, beaten

  • 1/2 cup frozen peas and carrots (or fresh, diced vegetables of choice)

  • 2 green onions, chopped

  • 1 clove garlic, minced

  • Salt and pepper, to taste

Instructions

  • Cook the Bacon: In a large skillet or wok over medium heat, cook chopped bacon until crispy. Remove bacon and set aside, leaving bacon fat in the pan.

  • Sauté Vegetables: Add minced garlic to the pan and cook for 30 seconds until fragrant. Add peas and carrots (or other vegetables) and sauté for 2-3 minutes until softened.

  • Scramble the Eggs: Push veggies to one side of the pan. Pour in beaten eggs and scramble until fully cooked, about 2 minutes.

  • Add Rice: Stir in chilled rice, breaking up any clumps. Mix well with the veggies and eggs.

  • Season: Drizzle soy sauce and sesame oil over the rice. Stir to coat evenly. Season with salt and pepper to taste.

  • Combine with Bacon: Return bacon to the pan and stir everything together. Cook another 2-3 minutes until heated through.

  • Garnish & Serve: Top with chopped green onions and serve immediately.

Notes

  • Day-old rice gives the best texture for fried rice.

  • Add a splash of sriracha or chili oil for a spicy kick.

  • Substitute turkey bacon for a lighter option.
