This Easy Bacon & Fried Rice recipe is the ultimate quick weeknight meal! Smoky, crispy bacon combined with fluffy rice, eggs, and veggies creates a flavorful fried rice that’s sure to become a family favorite.
Ingredients

4 slices bacon, chopped into small pieces

2 cups cooked rice (preferably chilled, day-old rice works best)

2 tablespoons soy sauce (or to taste)

1 tablespoon sesame oil

2 eggs, beaten

1/2 cup frozen peas and carrots (or fresh, diced vegetables of choice)

2 green onions, chopped

1 clove garlic, minced

Salt and pepper, to taste
Instructions

Cook the Bacon: In a large skillet or wok over medium heat, cook chopped bacon until crispy. Remove bacon and set aside, leaving bacon fat in the pan.

Sauté Vegetables: Add minced garlic to the pan and cook for 30 seconds until fragrant. Add peas and carrots (or other vegetables) and sauté for 2-3 minutes until softened.

Scramble the Eggs: Push veggies to one side of the pan. Pour in beaten eggs and scramble until fully cooked, about 2 minutes.

Add Rice: Stir in chilled rice, breaking up any clumps. Mix well with the veggies and eggs.

Season: Drizzle soy sauce and sesame oil over the rice. Stir to coat evenly. Season with salt and pepper to taste.

Combine with Bacon: Return bacon to the pan and stir everything together. Cook another 2-3 minutes until heated through.
