Description

This Brazilian-style Chicken Pie is savory, comforting, and incredibly easy to make — no dough rolling required! Just blend the batter, layer with a creamy chicken filling, and bake. It’s the perfect crowd-pleasing dish for brunch, potlucks, or weeknight dinners.


Ingredients

For the Filling:

  • 2 tablespoons oil

  • 1 chopped onion

  • 2 cups shredded cooked chicken

  • 1 tomato, chopped

  • 1 cup corn and/or peas

  • 2 tablespoons tomato paste or sauce

  • Salt, pepper, and oregano to taste

  • Optional: chopped parsley or a few spoonfuls of cream cheese

For the Batter:

  • 3 eggs

  • 2 cups milk

  • 1/2 cup oil

  • 1 1/2 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 2 tablespoons grated Parmesan cheese (optional)


Instructions

1️⃣ Prepare the Chicken Filling

  • In a skillet, heat oil and sauté the chopped onion until soft.

  • Add the shredded chicken, seasonings, chopped tomato, corn/peas, and tomato paste.

  • Stir well and cook for a few minutes until combined and heated through.

  • Let the filling cool slightly before assembling the pie.

2️⃣ Make the Batter

  • In a blender, combine: eggs, milk, oil, flour, baking powder, salt, and Parmesan cheese.

  • Blend until smooth — about 30–45 seconds.

3️⃣ Assemble the Pie

  • Grease a baking dish (roughly 9×13 inches or similar).

  • Pour half the batter into the pan and spread evenly.

  • Spoon the chicken filling evenly over the batter layer.

  • Pour the remaining batter on top, gently spreading to cover the filling.

4️⃣ Bake

  • Bake at 180°C (350°F) for 35–40 minutes, or until golden on top and a toothpick inserted comes out clean.

5️⃣ Cool & Serve

Let cool slightly before slicing and serving. Delicious warm or at room temperature!

Notes

  • Add grated carrots, chopped olives, or cream cheese dollops to the filling for extra flavor.

  • Top with a sprinkle of Parmesan or shredded mozzarella before baking for a golden crust.
