This Brazilian-style Chicken Pie is savory, comforting, and incredibly easy to make — no dough rolling required! Just blend the batter, layer with a creamy chicken filling, and bake. It’s the perfect crowd-pleasing dish for brunch, potlucks, or weeknight dinners.
Ingredients
For the Filling:

2 tablespoons oil

1 chopped onion

2 cups shredded cooked chicken

1 tomato, chopped

1 cup corn and/or peas

2 tablespoons tomato paste or sauce

Salt, pepper, and oregano to taste

Optional: chopped parsley or a few spoonfuls of cream cheese
For the Batter:

3 eggs

2 cups milk

1/2 cup oil

1 1/2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

2 tablespoons grated Parmesan cheese (optional)
Instructions
1️⃣ Prepare the Chicken Filling

In a skillet, heat oil and sauté the chopped onion until soft.

Add the shredded chicken, seasonings, chopped tomato, corn/peas, and tomato paste.

Stir well and cook for a few minutes until combined and heated through.

Let the filling cool slightly before assembling the pie.
2️⃣ Make the Batter

In a blender, combine: eggs, milk, oil, flour, baking powder, salt, and Parmesan cheese.

Blend until smooth — about 30–45 seconds.
3️⃣ Assemble the Pie

Grease a baking dish (roughly 9×13 inches or similar).

Pour half the batter into the pan and spread evenly.

Spoon the chicken filling evenly over the batter layer.

Pour the remaining batter on top, gently spreading to cover the filling.
4️⃣ Bake

Bake at 180°C (350°F) for 35–40 minutes, or until golden on top and a toothpick inserted comes out clean.
5️⃣ Cool & Serve
Let cool slightly before slicing and serving. Delicious warm or at room temperature!
