Ingredients

1/4 teaspoon baking soda

6 tablespoons (85g) cold unsalted butter, cubed

3/4 cup + 2 teaspoons (180mL) cold buttermilk
For the Honey Butter:

2 tablespoons butter

1 tablespoon honey
-
1/4 teaspoon vanilla extract
Instructions

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together flour, baking powder, sugar, salt, and baking soda.

Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Pour in the cold buttermilk and stir just until the dough comes together—do not overmix.

Turn the dough onto a lightly floured surface. Gently pat it into a ¾-inch thick rectangle. Fold the dough over itself 3–4 times to build layers, then pat it out again and cut out biscuits using a round cutter.

Place biscuits on the prepared baking sheet, close together for soft sides or spaced apart for crisp edges.

Bake for 12–15 minutes, or until golden brown on top.
For the Honey Butter:
