  • Salt & pepper, to taste

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lime juice and zest, garlic, chili powder, smoked paprika, cumin, salt, and pepper. Add chicken and coat thoroughly. Marinate for 20–30 minutes (or up to 2 hours for more flavor).
  2. Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook chicken 5–6 minutes per side until golden and fully cooked (internal temperature 165°F). Remove and let rest for 5 minutes, then slice.
  3. Make the Cilantro Lime Salsa: In a food processor or blender, combine cilantro, red onion, jalapeño, lime juice, olive oil, salt, and pepper. Pulse until slightly chunky but well combined.
  4. Assemble and Serve: Serve sliced chicken topped with cilantro lime salsa. Garnish with lime wedges, avocado slices, and green onions if desired.
