This Flatbread with Roasted Veggies & Whipped Feta is a vibrant and delicious vegetarian meal or appetizer. Featuring creamy whipped feta, flavorful roasted vegetables, and warm, crispy flatbread, it’s perfect for an easy dinner, lunch, or snack with Mediterranean flair!
Ingredients

2 flatbreads or naan

1 cup assorted roasted veggies (zucchini, red onion, bell pepper, eggplant)

1/2 cup crumbled feta cheese

2 tbsp Greek yogurt or cream cheese

1 tbsp olive oil

1 garlic clove, minced

Salt & pepper, to taste

Optional: fresh herbs (thyme, parsley, or basil)
Instructions

Preheat oven to 200°C (400°F). Place flatbreads on a baking sheet.

In a food processor, blend feta, Greek yogurt, garlic, and olive oil until smooth and creamy. Season with salt and pepper to taste.

Spread the whipped feta evenly over the flatbreads.

Top with roasted veggies and a light sprinkle of salt and pepper.

Bake for 8–10 minutes until edges are crispy and toppings are warmed through.

Garnish with fresh herbs if desired. Slice and serve warm.
