Ingredients
-
1 lb ground chicken
-
1 tablespoon olive oil
-
1 onion, sliced
-
2 bell peppers (any color), sliced
-
3 cloves garlic, minced
-
1 tablespoon chili powder
-
1 teaspoon paprika
-
1 teaspoon cumin
-
1/2 teaspoon salt
-
1/4 teaspoon black pepper
-
1/2 teaspoon red pepper flakes (optional, for heat)
-
3 cups chicken broth
-
12 oz penne pasta (or pasta of choice)
-
1/2 cup shredded cheddar cheese
-
1/4 cup sour cream (optional, for creaminess)
-
Fresh cilantro, chopped (for garnish)
Instructions
-
In a large pot, heat olive oil over medium-high heat. Add ground chicken and cook until browned, about 5-7 minutes, breaking it up with a spoon.
-
Add sliced onion and bell peppers. Cook 3-4 minutes until softened. Stir in minced garlic and cook 1 minute until fragrant.
-
Sprinkle in chili powder, paprika, cumin, salt, black pepper, and red pepper flakes (if using). Cook 1 minute to bloom spices.
-
Pour in chicken broth and bring to a boil. Add pasta, reduce heat to simmer, cover, and cook 10-12 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed.
-
Remove from heat. Stir in shredded cheddar until melted. Add sour cream if using, for extra creaminess.
-
Garnish with chopped cilantro and serve hot.
Notes
-
Use rotini or shells if you prefer different pasta shapes.
-
For a smoky flavor, add a pinch of smoked paprika.
-
Easily make it spicier with more red pepper flakes or a splash of hot sauce.
