Description

Ingredients

  • 1 lb ground chicken

  • 1 tablespoon olive oil

  • 1 onion, sliced

  • 2 bell peppers (any color), sliced

  • 3 cloves garlic, minced

  • 1 tablespoon chili powder

  • 1 teaspoon paprika

  • 1 teaspoon cumin

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon red pepper flakes (optional, for heat)

  • 3 cups chicken broth

  • 12 oz penne pasta (or pasta of choice)

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup sour cream (optional, for creaminess)

  • Fresh cilantro, chopped (for garnish)


Instructions

  • In a large pot, heat olive oil over medium-high heat. Add ground chicken and cook until browned, about 5-7 minutes, breaking it up with a spoon.

  • Add sliced onion and bell peppers. Cook 3-4 minutes until softened. Stir in minced garlic and cook 1 minute until fragrant.

  • Sprinkle in chili powder, paprika, cumin, salt, black pepper, and red pepper flakes (if using). Cook 1 minute to bloom spices.

  • Pour in chicken broth and bring to a boil. Add pasta, reduce heat to simmer, cover, and cook 10-12 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed.

  • Remove from heat. Stir in shredded cheddar until melted. Add sour cream if using, for extra creaminess.

  • Garnish with chopped cilantro and serve hot.

  • Use rotini or shells if you prefer different pasta shapes.

  • For a smoky flavor, add a pinch of smoked paprika.
