Ingredients

  • 2 hard-boiled eggs, mashed

  • 1 tbsp mayonnaise or Greek yogurt

  • Salt and black pepper, to taste

  • 4-5 large lettuce leaves

  • 1/2 avocado, halved, sprinkled with everything bagel seasoning

  • 1/2 cup cucumber slices

  • 1/2 cup carrot sticks

  • 1/2 cup cherry tomatoes or sliced tomatoes

  • 1/4 cup Kalamata olives

  • 1/4 cup thinly sliced red onion


Instructions

  • Prepare Egg Salad:
    Mash hard-boiled eggs with mayo or Greek yogurt, salt, and pepper until creamy and well combined.

  • Assemble the Plate:
