Description

This Garlic Butter White Fish is a simple, healthy, and flavorful meal featuring tender white fish fillets baked over fresh asparagus and cherry tomatoes, all drenched in a fragrant garlic butter sauce. Perfect for a quick dinner packed with vibrant veggies and zesty lemon.

Ingredients

Instructions

  • Preheat oven to 400°F (200°C).

  • Arrange asparagus and cherry tomatoes on a baking sheet. Drizzle with olive oil, season with salt, pepper, and red pepper flakes if using. Toss to coat.

  • Season fish fillets with salt and pepper and place them on top of the veggies.

  • In a small saucepan, melt butter over low heat. Add minced garlic and cook for 1–2 minutes until fragrant (do not brown).

  • Pour garlic butter evenly over the fish and vegetables.

  • Bake for 15–18 minutes, until fish is cooked through and flakes easily with a fork.

  • Remove from oven, squeeze fresh lemon juice over everything, and garnish with chopped parsley.

  • Serve immediately with lemon wedges on the side.

Notes

  • Use firm white fish fillets for best texture.

  • Adjust red pepper flakes for desired heat level.

  • Can be served with rice, quinoa, or crusty bread for a fuller meal.
