Ingredients

6 bone-in or boneless chicken thighs

2 tablespoons olive oil

3 tablespoons butter

4 cloves garlic, minced

250 g (about 9 oz) mushrooms, sliced

1 teaspoon dried thyme or Italian seasoning

1/2 cup chicken broth

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)
Instructions

Season chicken thighs with salt, pepper, and thyme (or Italian seasoning).

Heat olive oil in a large skillet over medium-high heat. Add chicken and sear 4-5 minutes per side until golden and cooked through. Transfer chicken to a plate.

In the same skillet, reduce heat to medium. Melt butter, add garlic, and cook 30 seconds until fragrant.

Add mushrooms and sauté 4-5 minutes until browned and tender.

Pour in chicken broth, stir, and simmer 2-3 minutes to slightly reduce the sauce.

Return chicken to the skillet, spoon sauce over the top, and cook 2 minutes more to reheat.
