Description

These Garlic Mushroom Chicken Thighs are a quick, easy, and flavorful dinner ready in just 30 minutes. Juicy chicken thighs are seared and simmered with mushrooms and a rich garlic butter sauce — perfect for busy weeknights!


Ingredients

  • 6 bone-in or boneless chicken thighs

  • 2 tablespoons olive oil

  • 3 tablespoons butter

  • 4 cloves garlic, minced

  • 250 g (about 9 oz) mushrooms, sliced

  • 1 teaspoon dried thyme or Italian seasoning

  • 1/2 cup chicken broth

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  • Season chicken thighs with salt, pepper, and thyme (or Italian seasoning).

  • Heat olive oil in a large skillet over medium-high heat. Add chicken and sear 4-5 minutes per side until golden and cooked through. Transfer chicken to a plate.

  • In the same skillet, reduce heat to medium. Melt butter, add garlic, and cook 30 seconds until fragrant.

  • Add mushrooms and sauté 4-5 minutes until browned and tender.

  • Pour in chicken broth, stir, and simmer 2-3 minutes to slightly reduce the sauce.

  • Return chicken to the skillet, spoon sauce over the top, and cook 2 minutes more to reheat.

  • Garnish with parsley and serve hot with rice, potatoes, or crusty bread.

Notes

  • For extra richness, add a splash of cream at the end.

  • Works well with boneless skinless thighs or drumsticks.
