This Easy Blackened Chicken is bold, flavorful, and ready in just 30 minutes—perfect for busy weeknights! With a smoky homemade spice rub and juicy chicken breasts, it’s a healthy, protein-packed dish that’s delicious served over rice, quinoa, or veggies.


Ingredients

  • 2 boneless, skinless chicken breasts

  • 1 tbsp olive oil

  • 1 tbsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried oregano

  • 1 tsp black pepper

  • 1/2 tsp cayenne pepper (optional)

  • Salt to taste

  • 1 cup cooked quinoa or brown rice (optional, for serving)


Instructions

  • Pat chicken breasts dry with paper towels to help seasoning stick.

  • In a small bowl, mix together paprika, garlic powder, onion powder, oregano, black pepper, cayenne pepper (if using), and salt.

  • Rub the spice mixture all over both sides of the chicken breasts.

  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for about 6–7 minutes per side, or until internal temperature reaches 165°F (74°C).

  • Let rest a few minutes before serving over quinoa, brown rice, or vegetables.

Notes

  • Omit cayenne pepper for a milder dish.

  • Use pre-cut or thin chicken breasts to speed up cooking.
