Sweet Potatoes:

  • 2 medium sweet potatoes, peeled and cubed

Seasoning:

  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Additional Toppings:

  • 2 tbsp pure maple syrup
  • 50g goat cheese, crumbled
  • 1/4 cup walnuts, roughly chopped
  • 1 tsp fresh thyme leaves (optional)

Instructions

  1. Preheat the oven: Set to 200°C (400°F).
  2. Prepare the sweet potatoes: Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet in a single layer.
