- 1/4 cup walnuts, roughly chopped

Instructions
- Preheat the oven: Set to 200°C (400°F).
- Roast the sweet potatoes: Roast for 20–25 minutes, stirring halfway through, until tender and lightly caramelized. Drizzle maple syrup over sweet potatoes during the last 5 minutes of roasting.
- Add toppings: Remove from oven and sprinkle with crumbled goat cheese, chopped walnuts, and thyme if using.
