For the Orzo

  • 1 cup orzo pasta
  • 2 cups chicken broth

For the Roasted Cranberries

  • 1 cup fresh cranberries
  • 1 tablespoon honey
  • 1 teaspoon olive oil

For the Goat Cheese Sauce

  • 1/2 cup goat cheese, softened
  • 1/4 cup heavy cream
  • 1 teaspoon lemon juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon black pepper

Instructions

  1. Roast the Cranberries – Preheat the oven to 375°F (190°C). Toss cranberries with honey and olive oil, spread on a baking sheet, and roast for 12–15 minutes.
  2. Prepare the Honey Garlic Chicken – Mix honey, soy sauce, Dijon mustard, paprika, and garlic. Cook chicken in skillet.
  3. Cook the Orzo – Toast orzo, add broth and salt, simmer until tender.
  4. Make the Goat Cheese Sauce – Whisk together goat cheese, cream, lemon juice, olive oil, and black pepper.
  5. Assemble the Skillet – Place sliced chicken over orzo, top with cranberries.
  6. Add the Goat Cheese Sauce – Drizzle the sauce over the skillet.
  7. Garnish and Serve – Sprinkle with parsley and optional honey drizzle. Serve warm.
