Instructions
- Roast the Cranberries – Preheat the oven to 375°F (190°C). Toss cranberries with honey and olive oil, spread on a baking sheet, and roast for 12–15 minutes.
- Prepare the Honey Garlic Chicken – Mix honey, soy sauce, Dijon mustard, paprika, and garlic. Cook chicken in skillet.
- Cook the Orzo – Toast orzo, add broth and salt, simmer until tender.
- Make the Goat Cheese Sauce – Whisk together goat cheese, cream, lemon juice, olive oil, and black pepper.
- Assemble the Skillet – Place sliced chicken over orzo, top with cranberries.
- Add the Goat Cheese Sauce – Drizzle the sauce over the skillet.
- Garnish and Serve – Sprinkle with parsley and optional honey drizzle. Serve warm.
