  • 8 sheets phyllo pastry, thawed
  • 8 oz feta cheese, cut into small rectangles
  • 2 tbsp butter, melted
  • 1 tsp dried thyme or oregano
  • 1 tbsp honey (for brushing inside, optional)

For the Sweet Cranberry Honey

  • 3 tbsp honey
  • 2 tbsp cranberry sauce or pureed cranberries
  • 1/2 tsp lemon juice

Optional Garnish

  • Fresh thyme or rosemary
  • Crushed pistachios or walnuts

Instructions

  1. Preheat oven: Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Prepare the phyllo: Lay one sheet of phyllo flat and brush lightly with melted butter. Place a second sheet on top and brush again.
  3. Fill the rolls: Place a piece of feta near one edge of the phyllo. Sprinkle with dried thyme and drizzle lightly with honey if using. Roll tightly into a cylinder and tuck ends underneath. Repeat for remaining rolls.
  4. Bake: Place rolls on the prepared baking sheet and brush tops with remaining melted butter. Bake 12–15 minutes until golden and crisp.
  5. Make the cranberry honey drizzle: In a small saucepan, gently warm honey and cranberry sauce with lemon juice until smooth and slightly thickened.
  6. Serve: Drizzle baked feta rolls with sweet cranberry honey and garnish with fresh herbs and nuts if desired. Serve warm.
