For the Rolls
- 8 sheets phyllo pastry, thawed
- 8 oz feta cheese, cut into small rectangles
- 2 tbsp butter, melted
- 1 tsp dried thyme or oregano
- 1 tbsp honey (for brushing inside, optional)
For the Sweet Cranberry Honey
- 3 tbsp honey
- 2 tbsp cranberry sauce or pureed cranberries
- 1/2 tsp lemon juice
Optional Garnish
- Fresh thyme or rosemary
- Crushed pistachios or walnuts
Instructions
- Preheat oven: Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Prepare the phyllo: Lay one sheet of phyllo flat and brush lightly with melted butter. Place a second sheet on top and brush again.
- Fill the rolls: Place a piece of feta near one edge of the phyllo. Sprinkle with dried thyme and drizzle lightly with honey if using. Roll tightly into a cylinder and tuck ends underneath. Repeat for remaining rolls.
- Bake: Place rolls on the prepared baking sheet and brush tops with remaining melted butter. Bake 12–15 minutes until golden and crisp.
- Make the cranberry honey drizzle: In a small saucepan, gently warm honey and cranberry sauce with lemon juice until smooth and slightly thickened.
- Serve: Drizzle baked feta rolls with sweet cranberry honey and garnish with fresh herbs and nuts if desired. Serve warm.
