Ingredients

For the Churros:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 1 tsp matcha powder
  • 3 eggs
  • 1/2 tsp vanilla extract
  • Oil for frying

For the Berry Cream Filling:

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup mixed berry puree (raspberries, blueberries, or strawberries)

For Assembly & Garnish:

  • 1/4 cup raspberry jam
  • Fresh raspberries and blueberries
  • Powdered sugar for dusting
  • Mint leaves (optional)

Instructions

  • Make the Churro Dough: In a saucepan, heat water, butter, sugar, and salt until boiling. Reduce heat, add flour and matcha, and stir vigorously until a dough forms. Let cool slightly.
  • Add Eggs & Pipe: Beat in eggs one at a time until smooth. Transfer to a piping bag with a star tip.
  • Fry the Churros: Heat oil to 350°F (175°C). Pipe flower shapes into the oil and fry until golden. Drain on paper towels.
  • Prepare the Berry Cream: Whip heavy cream with powdered sugar and vanilla until stiff peaks form. Fold in berry puree.
  • Assemble the Cake: Stack layers of churros, spreading berry cream and raspberry jam between each.
  • Garnish & Serve: Top with fresh berries, dust with powdered sugar, and add mint leaves.
