For the Churros:
- 1 cup water
- 1/2 cup unsalted butter
- 2 tbsp sugar
- 1/4 tsp salt
- 1 cup all-purpose flour
- 1 tsp matcha powder
- 3 eggs
- 1/2 tsp vanilla extract
- Oil for frying
For the Berry Cream Filling:
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 1/2 cup mixed berry puree (raspberries, blueberries, or strawberries)
For Assembly & Garnish:
- 1/4 cup raspberry jam
- Fresh raspberries and blueberries
- Powdered sugar for dusting
- Mint leaves (optional)
Instructions
- Make the Churro Dough: In a saucepan, heat water, butter, sugar, and salt until boiling. Reduce heat, add flour and matcha, and stir vigorously until a dough forms. Let cool slightly.
- Add Eggs & Pipe: Beat in eggs one at a time until smooth. Transfer to a piping bag with a star tip.
- Fry the Churros: Heat oil to 350°F (175°C). Pipe flower shapes into the oil and fry until golden. Drain on paper towels.
- Prepare the Berry Cream: Whip heavy cream with powdered sugar and vanilla until stiff peaks form. Fold in berry puree.
- Assemble the Cake: Stack layers of churros, spreading berry cream and raspberry jam between each.
- Garnish & Serve: Top with fresh berries, dust with powdered sugar, and add mint leaves.
