Description

Golden Herb-Baked Feta with Olives, Tomatoes & Rustic Bread is a flavorful and easy-to-make appetizer that combines the creaminess of feta with the brightness of cherry tomatoes and the brininess of Kalamata olives, all baked to perfection and served with crispy toasted bread.

For the Baked Feta:

  • 8 oz (225g) block feta cheese
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme or rosemary
  • 1/2 tsp crushed red pepper flakes (optional)
  • Freshly cracked black pepper, to taste

For the Vegetables & Olives:

  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 1 garlic clove, thinly sliced
  • 1 tbsp olive oil
  • Salt and pepper, to taste

For Serving:

  • 1 rustic baguette or sourdough bread, sliced and toasted
  • Fresh parsley, chopped (for garnish)
  • Optional: drizzle of balsamic glaze

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C).
  2. Prepare the Feta & Veggies: Place feta in a small oven-safe baking dish. Surround with cherry tomatoes, olives, and garlic slices. Drizzle everything with olive oil and sprinkle oregano, thyme, red pepper flakes, salt, and black pepper.
  3. Bake: Bake for 15–20 minutes, until feta is soft and golden on top and tomatoes are blistered.
  4. Toast the Bread: While feta bakes, toast rustic bread slices until lightly golden.
  5. Serve: Remove baked feta from the oven. Sprinkle with fresh parsley and drizzle with balsamic glaze if desired. Serve immediately with toasted bread for dipping.
