Turmeric Chicken:
- 1 1/2 lb boneless, skinless chicken thighs or breasts
- 2 tbsp olive oil
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 2 cloves garlic, minced
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp lemon juice
Healing Spiced Rice:
- 1 cup basmati or jasmine rice
- 2 cups vegetable or chicken broth
- 1 small onion, finely diced
- 1 clove garlic, minced
- 1 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cumin
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1/4 cup toasted almonds or cashews
- 2 tbsp fresh parsley or cilantro, chopped
Instructions
- Marinate the chicken: In a bowl, combine olive oil, turmeric, cumin, paprika, garlic, salt, pepper, and lemon juice. Add chicken and coat thoroughly. Marinate 20–30 minutes or up to overnight.
- Cook the spiced rice: Heat olive oil in a medium saucepan over medium heat. Sauté onion and garlic until fragrant. Add turmeric, cinnamon, and cumin; toast for 1 minute. Stir in rice to coat with spices. Add broth, bring to a boil, then reduce heat, cover, and simmer 15–18 minutes until rice is tender. Fluff with a fork and stir in toasted nuts and fresh herbs.
- Cook the chicken: Heat a skillet over medium-high heat. Sear chicken 5–7 minutes per side until golden and cooked through. Remove and let rest 5 minutes.
- Assemble & serve: Serve golden turmeric chicken over spiced rice. Garnish with extra herbs or nuts if desired.
