For the beef:

  • 500g (1 lb) lean beef strips
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Juice of 1/2 lemon
  • Salt and pepper, to taste

For the wraps:

  • 4 large pita or flatbreads
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup Kalamata olives, sliced
  • Fresh parsley, chopped

For the whipped feta sauce:

  • 150g (5 oz) feta cheese, crumbled
  • 60g (1/4 cup) cream cheese, softened
  • 23 tbsp Greek yogurt
  • 1 garlic clove, minced
  • 1 tsp lemon juice
  • 12 tbsp olive oil
  • Freshly ground black pepper

Instructions

  1. Marinate the beef: In a bowl, combine olive oil, oregano, garlic powder, smoked paprika, lemon juice, salt, and pepper. Add beef strips and toss to coat. Marinate 10–15 minutes.
  2. Cook the beef: Heat a skillet over medium-high heat. Sear beef strips 3–4 minutes until browned and tender. Remove from heat.
  3. Make the whipped feta sauce: In a food processor, blend feta, cream cheese, Greek yogurt, garlic, lemon juice, and olive oil until smooth and creamy. Season with black pepper to taste.
  4. Assemble the wraps: Warm pita or flatbreads. Spread a generous layer of whipped feta sauce, then top with cooked beef, cherry tomatoes, cucumber, red onion, olives, and parsley.
  5. Serve: Fold wraps tightly and serve immediately.
