For the beef:
- 500g (1 lb) lean beef strips
- 2 tbsp olive oil
- 2 tsp dried oregano
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Juice of 1/2 lemon
- Salt and pepper, to taste
For the wraps:
- 4 large pita or flatbreads
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup Kalamata olives, sliced
- Fresh parsley, chopped
For the whipped feta sauce:
- 150g (5 oz) feta cheese, crumbled
- 60g (1/4 cup) cream cheese, softened
- 2–3 tbsp Greek yogurt
- 1 garlic clove, minced
- 1 tsp lemon juice
- 1–2 tbsp olive oil
- Freshly ground black pepper
Instructions
- Marinate the beef: In a bowl, combine olive oil, oregano, garlic powder, smoked paprika, lemon juice, salt, and pepper. Add beef strips and toss to coat. Marinate 10–15 minutes.
- Cook the beef: Heat a skillet over medium-high heat. Sear beef strips 3–4 minutes until browned and tender. Remove from heat.
- Make the whipped feta sauce: In a food processor, blend feta, cream cheese, Greek yogurt, garlic, lemon juice, and olive oil until smooth and creamy. Season with black pepper to taste.
- Assemble the wraps: Warm pita or flatbreads. Spread a generous layer of whipped feta sauce, then top with cooked beef, cherry tomatoes, cucumber, red onion, olives, and parsley.
- Serve: Fold wraps tightly and serve immediately.
