- 1 tbsp fresh lemon juice
- 1 tsp olive oil
- Salt and black pepper, to taste
Bowl Base:
- 2 cups cooked rice, quinoa, or couscous
- Sliced cucumber
- Cherry tomatoes, halved
- Red onion, thinly sliced
- Kalamata olives, pitted and sliced
- Fresh parsley or dill, chopped
Instructions
- Greek Chicken: In a bowl, toss chicken with olive oil, garlic, oregano, paprika, cumin, lemon juice, lemon zest, salt, and pepper.
- Creamy Tzatziki Feta: In a small food processor or bowl, combine feta, Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, salt, and pepper. Blend or whisk until smooth to create creamy tzatziki feta.
