Dill Tzatziki Feta Sauce

  • 200 g feta cheese
  • 1/2 cup plain Greek yogurt
  • 2 tbsp fresh dill, chopped
  • 1 tbsp fresh lemon juice
  • 1 small garlic clove, minced
  • Black pepper, to taste

Bowls

  • 2 cups cooked rice, quinoa, or couscous
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup kalamata olives, sliced
  • Fresh parsley or dill, chopped
  • Optional: warm pita bread

Instructions

  1. Marinate the Chicken – In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken and coat well. Marinate for at least 30 minutes, up to 12 hours for best flavor.
  2. Cook the Chicken – Grill or pan-sear chicken over medium-high heat for 5–6 minutes per side until golden and fully cooked. Rest for 5 minutes, then slice thinly.
  3. Make the Dill Tzatziki Feta Sauce – Blend feta, Greek yogurt, dill, lemon juice, garlic, and black pepper in a food processor until smooth. Adjust consistency with a splash of water if needed.
  4. Assemble the Bowls – Layer rice, quinoa, or couscous as the base. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and olives. Drizzle generously with dill tzatziki feta sauce and garnish with fresh herbs. Serve with pita if desired.
