For the Garlic Tzatziki Feta

  • 1/2 cup Greek yogurt
  • 120 g feta cheese
  • 1/2 cucumber, grated and excess water squeezed out
  • 2 cloves garlic, finely minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Black pepper, to taste

For the Bowl

  • 1 cup cooked rice, orzo, or pita-style grains
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • Kalamata olives, sliced (optional)
  • Fresh parsley or dill, chopped

Instructions

  1. Marinate & Cook Chicken: In a bowl, combine olive oil, garlic, oregano, cumin, smoked paprika, lemon juice, salt, and pepper. Add chicken and marinate for at least 20 minutes. Heat a skillet or grill pan over medium-high heat and cook chicken for 6–8 minutes until golden, slightly charred, and fully cooked.
  2. Prepare Garlic Tzatziki Feta: In a food processor or blender, combine Greek yogurt, feta, grated cucumber, garlic, olive oil, lemon juice, and black pepper. Blend until creamy with a slight texture.
  3. Assemble the Bowl: Add rice, orzo, or grains to the bowl as a base. Top with warm gyro chicken. Add cherry tomatoes, cucumber, red onion, and olives if using. Drizzle generously with garlic tzatziki feta. Garnish with fresh herbs. Serve warm with extra sauce on the side.
