Greek Chicken Gyros:

- 1/2 tsp black pepper
- 1 tsp salt
Herb Tzatziki Feta Sauce:
- 200 g feta cheese
- 1/2 cup plain Greek yogurt
- 2 tbsp fresh dill, chopped
- 1 tbsp fresh lemon juice
- 1 small garlic clove
- Black pepper, to taste
For the Bowls:
- 2 cups cooked rice or couscous
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup kalamata olives, sliced
- Fresh parsley or mint, chopped
- Optional: warm pita bread
Instructions
- Marinate the Chicken: In a bowl, whisk olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken, coat well, and marinate for at least 30 minutes (up to 12 hours).
- Cook the Chicken: Grill over medium-high heat for 5–6 minutes per side until golden and cooked through, or pan-sear in a hot skillet with olive oil. Slice once rested.
- Make the Herb Tzatziki Feta Sauce: Blend feta, Greek yogurt, dill, lemon juice, garlic, and black pepper in a food processor until smooth. Adjust consistency with a splash of water if needed.
- Assemble the Bowls: Layer rice or couscous in bowls. Top with sliced chicken, tomatoes, cucumber, red onion, and olives. Drizzle generously with herb tzatziki feta sauce and garnish with fresh parsley or mint.
