Gyro Chicken:

- 1/2 tsp ground cumin
- Salt and black pepper, to taste
Honey Whipped Feta:
- 120 g (4 oz) feta cheese, crumbled
- 3/4 cup Greek yogurt
- 1 tbsp honey (adjust to taste)
- 1 tbsp olive oil
- 1 small garlic clove, grated
- Black pepper, to taste
Bowls:
- Cooked rice, quinoa, or roasted potatoes
- Cherry tomatoes, halved
- Sliced cucumber
- Sliced red onion
- Fresh parsley or dill
Instructions
- Marinate the chicken: In a bowl, whisk olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken and marinate for at least 30 minutes (up to overnight).
- Cook the chicken: Heat a skillet or grill pan over medium-high heat. Cook chicken for 5–6 minutes per side until golden, slightly charred, and cooked through. Rest for 5 minutes, then slice thinly.
- Make honey whipped feta: Blend feta, Greek yogurt, honey, olive oil, garlic, and black pepper until smooth and creamy. Adjust honey to taste.
- Assemble bowls: Layer rice, quinoa, or potatoes in bowls. Top with sliced chicken, cherry tomatoes, cucumber, onion, and generous dollops of honey whipped feta.
- Serve: Garnish with fresh herbs and cracked black pepper. Drizzle extra honey if desired for sweetness contrast.
