  • 1 tbsp fresh dill, chopped
  • Salt & black pepper to taste

For the Bowl

  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, sliced
  • Fresh parsley or dill for garnish

Instructions

  1. Marinate the Chicken: In a bowl, toss chicken with olive oil, smoked paprika, garlic powder, oregano, lemon juice, salt, and pepper. Marinate for 15–30 minutes.
  2. Cook the Chicken: Heat a skillet over medium-high heat and cook chicken 4–5 minutes per side until golden and fully cooked.
  3. Prepare the Lemon Tzatziki Feta: Blend Greek yogurt, feta, garlic, lemon juice, olive oil, dill, salt, and pepper until smooth and creamy.
  4. Assemble the Bowls: Layer rice or quinoa, chicken, cherry tomatoes, cucumber, red onion, and olives in bowls.
