For the Chicken

- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp dried oregano
- Salt & black pepper to taste
- Juice of 1 lemon
For the Lemon Tzatziki Feta
- 1/2 cup Greek yogurt
- 1/4 cup crumbled feta cheese
- 1 clove garlic, minced
- 1 tsp lemon juice
- 1 tsp olive oil
- 1 tbsp fresh dill, chopped
- Salt & black pepper to taste
For the Bowl
- 2 cups cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, sliced
- Fresh parsley or dill for garnish
Instructions
- Marinate the Chicken: In a bowl, toss chicken with olive oil, smoked paprika, garlic powder, oregano, lemon juice, salt, and pepper. Marinate for 15–30 minutes.
- Cook the Chicken: Heat a skillet over medium-high heat and cook chicken 4–5 minutes per side until golden and fully cooked.
- Prepare the Lemon Tzatziki Feta: Blend Greek yogurt, feta, garlic, lemon juice, olive oil, dill, salt, and pepper until smooth and creamy.
- Assemble the Bowls: Layer rice or quinoa, chicken, cherry tomatoes, cucumber, red onion, and olives in bowls.
- Top with Sauce: Drizzle generously with lemon tzatziki feta and garnish with fresh herbs. Serve immediately.
