For the Chicken Gyro
- 1 1/2 lbs (700g) boneless, skinless chicken thighs or breasts, sliced
- 3 tbsp olive oil
- Juice of 1 lemon
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp paprika
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Spicy Garlic Feta
- 3/4 cup crumbled feta cheese
- 1/3 cup Greek yogurt
- 2 garlic cloves, finely minced or grated
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp chili flakes (adjust to taste)
- 1–2 tbsp warm water (to thin)
For the Bowl Base
- 2 cups cooked basmati or jasmine rice
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup kalamata olives, sliced
- 2 tbsp fresh parsley, chopped
Instructions
- Marinate the Chicken – In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken and toss well to coat. Cover and marinate for at least 30 minutes (up to 4 hours for deeper flavor).
- Cook the Chicken – Heat a skillet or grill pan over medium-high heat. Cook chicken 5–6 minutes per side until golden and internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 minutes before slicing.
- Make the Spicy Garlic Feta – In a bowl, combine feta, Greek yogurt, minced garlic, olive oil, lemon juice, and chili flakes. Blend or whisk until smooth and creamy. Add warm water gradually to create a thick but drizzle-friendly consistency.
- Assemble the Bowls – Divide cooked rice among bowls. Top with sliced chicken gyro. Arrange cherry tomatoes, cucumber, red onion, olives, and parsley around the bowl. Spoon generous amounts of spicy garlic feta over the chicken.
- Serve – Garnish with dill, extra chili flakes, and lemon wedges if desired. Serve warm and enjoy immediately.
