For the Chicken Gyro:
- 1 lb (450g) boneless skinless chicken thighs or breasts, sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp crushed red pepper (adjust to taste)
- Salt and black pepper, to taste
For the Spicy Lemon Garlic Feta:
- 1/2 cup crumbled feta cheese
- 2 tbsp Greek yogurt
- 1 small garlic clove, minced
- 1 tsp lemon juice
- 1/2 tsp crushed red pepper flakes (or more for heat)
- 1 tsp olive oil
- Black pepper, to taste
For the Bowl:
- 2 cups cooked rice, quinoa, or cauliflower rice
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup Kalamata olives (optional)
- Fresh parsley or mint for garnish
Instructions
- Cook the Chicken: In a bowl, combine olive oil, garlic, lemon juice, oregano, paprika, crushed red pepper, salt, and black pepper. Toss chicken slices in the marinade. Cook in a skillet over medium-high heat for 6–8 minutes until golden and fully cooked.
- Prepare the Spicy Lemon Garlic Feta: In a small bowl or food processor, mix feta, Greek yogurt, garlic, lemon juice, olive oil, and red pepper flakes until creamy. Season with black pepper to taste.
- Assemble the Bowl: Place rice or quinoa as the base. Top with cooked chicken, cherry tomatoes, cucumber, red onion, and olives if using. Drizzle or dollop the spicy lemon garlic feta over the top.
- Serve: Garnish with fresh parsley or mint. Serve warm or slightly chilled.
