Greek Chicken
- 1 1/2 lb (700 g) boneless skinless chicken breasts or thighs
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- Zest of 1 lemon
- 3 cloves garlic, minced
- 1 1/2 tsp dried oregano
- 1/2 tsp paprika
- Salt and black pepper, to taste
Spicy Tzatziki Feta
- 1 cup Greek yogurt
- 1/2 cup crumbled feta cheese
- 1/2 cucumber, grated and excess water squeezed out
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp red chili flakes (adjust to taste)
- 1 tbsp fresh dill, chopped
- Salt and black pepper, to taste
For the Bowl
- 2 cups cooked rice, quinoa, or couscous
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives
- Fresh parsley or dill, for garnish
- Pita bread wedges, optional
Instructions
- Marinate the Chicken – In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and pepper. Coat the chicken and marinate for 15–20 minutes.
- Cook the Chicken – Heat a skillet or grill pan over medium-high heat. Cook chicken for 5–6 minutes per side until golden and cooked through. Let rest briefly, then slice thinly.
- Prepare the Spicy Tzatziki Feta – In a bowl, combine Greek yogurt, feta, grated cucumber, garlic, lemon juice, chili flakes, dill, salt, and pepper. Mix until creamy and smooth.
- Assemble the Bowls – Divide rice or grains among bowls. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and olives.
- Finish & Serve – Spoon generous amounts of spicy tzatziki feta over each bowl. Garnish with fresh herbs and serve with pita wedges if desired.
