Greek Chicken

  • 1 1/2 lb (700 g) boneless skinless chicken breasts or thighs
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • Zest of 1 lemon
  • 3 cloves garlic, minced
  • 1 1/2 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and black pepper, to taste

Spicy Tzatziki Feta

  • 1 cup Greek yogurt
  • 1/2 cup crumbled feta cheese
  • 1/2 cucumber, grated and excess water squeezed out
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp red chili flakes (adjust to taste)
  • 1 tbsp fresh dill, chopped
  • Salt and black pepper, to taste

For the Bowl

  • 2 cups cooked rice, quinoa, or couscous
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • Fresh parsley or dill, for garnish
  • Pita bread wedges, optional

Instructions

  1. Marinate the Chicken – In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and pepper. Coat the chicken and marinate for 15–20 minutes.
  2. Cook the Chicken – Heat a skillet or grill pan over medium-high heat. Cook chicken for 5–6 minutes per side until golden and cooked through. Let rest briefly, then slice thinly.
  3. Prepare the Spicy Tzatziki Feta – In a bowl, combine Greek yogurt, feta, grated cucumber, garlic, lemon juice, chili flakes, dill, salt, and pepper. Mix until creamy and smooth.
  4. Assemble the Bowls – Divide rice or grains among bowls. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and olives.
  5. Finish & Serve – Spoon generous amounts of spicy tzatziki feta over each bowl. Garnish with fresh herbs and serve with pita wedges if desired.
