- 1 cup cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 small cucumber, diced
- 1 small red onion, thinly sliced
- 1 handful fresh spinach or mixed greens
For the Yogurt Feta Sauce:
- 120g Greek yogurt
- 50g feta cheese, crumbled
- 1 clove garlic, minced
- 1 tsp lemon juice
- Salt and pepper, to taste
Instructions
- Marinate and cook chicken: In a bowl, toss chicken with olive oil, smoked paprika, garlic powder, oregano, salt, and pepper. Cook in a skillet over medium heat until fully cooked and browned, about 5–7 minutes.
- Prepare the sauce: Combine Greek yogurt, feta cheese, garlic, lemon juice, salt, and pepper in a bowl until well mixed.
- Assemble the bowls: Divide cooked rice or quinoa among bowls. Top with cooked chicken, cherry tomatoes, cucumber, red onion, and spinach.
- Add sauce: Drizzle each bowl generously with yogurt feta sauce.
