- 1/4 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped
- Pinch of salt and black pepper
Gyros:
- 4 warm pita breads
- 1 cup chopped romaine lettuce
- 1 cup diced tomatoes
- 1/2 cup sliced cucumber
- Optional: Kalamata olives
Instructions
- Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, smoked paprika, salt, and black pepper. Add chicken, coat well, cover, and refrigerate for at least 30 minutes.
- Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook chicken for 5–7 minutes per side until cooked through. Let rest, then slice into strips.
- Char the Onion: In a skillet, cook sliced red onion in olive oil until slightly charred. Drizzle honey over onions and caramelize.
- Make the Feta Sauce: Combine feta, Greek yogurt, lemon juice, parsley, salt, pepper, and honey-charred onions in a bowl.
