Units Scale

Greek Chicken Marinade:

  • 2 large boneless, skinless chicken breasts (or 4 small)
  • 3 tablespoons olive oil
  • Juice of 1 large lemon
  • Zest of 1 lemon
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Honey Charred Onion Feta Sauce:

  • 1 small red onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1/2 cup crumbled feta cheese
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • Pinch of salt and black pepper

Gyros:

  • 4 warm pita breads
  • 1 cup chopped romaine lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sliced cucumber
  • Optional: Kalamata olives

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, smoked paprika, salt, and black pepper. Add chicken, coat well, cover, and refrigerate for at least 30 minutes.
  2. Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook chicken for 5–7 minutes per side until cooked through. Let rest, then slice into strips.
  3. Char the Onion: In a skillet, cook sliced red onion in olive oil until slightly charred. Drizzle honey over onions and caramelize.
  4. Make the Feta Sauce: Combine feta, Greek yogurt, lemon juice, parsley, salt, pepper, and honey-charred onions in a bowl.
  5. Assemble the Gyros: Fill warm pita with chicken, romaine, tomatoes, cucumber, and olives. Top with feta sauce, fold, and serve.
