For the Chicken
- 1 lb boneless skinless chicken breasts or thighs, diced

- 1 teaspoon paprika

- 1 tablespoon lemon juice
For the Garlic Yogurt Sauce
- 3/4 cup Greek yogurt
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
For the Pita Bowls
- 4 pita breads, cut into halves or quarters
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup Kalamata olives, pitted
- 1/2 cup crumbled feta cheese
- 1 cup shredded lettuce
- Fresh parsley for garnish
Instructions
- Marinate the chicken – In a bowl, combine diced chicken with olive oil, garlic, oregano, paprika, salt, pepper, and lemon juice. Toss to coat and let marinate for 15–20 minutes.
- Cook the chicken – Heat a skillet over medium-high heat. Add the chicken and cook for 6–8 minutes, stirring occasionally, until fully cooked and golden brown.
- Prepare the garlic yogurt sauce – In a small bowl, mix Greek yogurt, minced garlic, lemon juice, olive oil, salt, and pepper. Stir until smooth and creamy.
- Warm the pita – Lightly toast the pita halves in the oven or on a skillet for 1–2 minutes until soft and warm.
- Assemble the pita bowls – Place shredded lettuce as a base in each pita bowl. Add cherry tomatoes, cucumber, olives, feta, and cooked chicken.
- Drizzle the sauce – Spoon the garlic yogurt sauce over each bowl.
- Garnish and serve – Sprinkle with fresh parsley and serve immediately.
