For the Chicken:

- 2 tbsp fresh lemon juice

For the Whipped Garlic Feta Cream:
- 1/2 cup crumbled feta cheese
- 2 tbsp Greek yogurt or cream cheese
- 1 garlic clove, minced
- 1 tsp lemon juice
- 1/2 tsp lemon zest
- 1 tsp olive oil
For the Pitas:
- 4 pita breads
- 1/2 cup cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1 cup lettuce or arugula
Instructions
- Marinate the Chicken: In a bowl, mix olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and pepper. Add chicken and marinate for 20–30 minutes.
- Cook the Chicken: Heat a skillet or grill pan over medium heat. Cook chicken for 5–6 minutes per side until golden and fully cooked (internal temperature 165°F / 74°C). Let rest, then slice into strips.
- Prepare the Whipped Garlic Feta Cream: In a small bowl, combine feta, Greek yogurt (or cream cheese), garlic, lemon juice, lemon zest, and olive oil. Whip until smooth and creamy.
- Assemble the Pitas: Warm the pita breads slightly. Spread a generous layer of whipped garlic feta cream inside each pita. Add sliced chicken, cucumber, cherry tomatoes, red onion, and lettuce.
- Serve: Garnish with olives, fresh parsley, or extra feta if desired. Serve immediately.
