For the Chicken Souvlaki:

For the Bowl Base:
- 2 cups cooked basmati rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup kalamata olives, sliced
- 2 tablespoons chopped fresh parsley
For the Spicy Lemon Feta Sauce:
- 1/2 cup crumbled feta cheese
- 1/2 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1/2 teaspoon chili flakes (adjust to taste)
- 1 small garlic clove, minced
- Black pepper, to taste
Instructions
- Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, garlic, oregano, smoked paprika, cumin, salt, and pepper. Toss chicken cubes in the marinade and let sit for at least 30 minutes.
- Cook the Chicken: Thread chicken onto skewers (if using wooden skewers, soak first). Grill or cook in a hot skillet for 8–10 minutes, turning occasionally, until golden and cooked through (internal temperature 165°F / 75°C).
- Prepare the Spicy Lemon Feta Sauce: In a small bowl, combine feta, Greek yogurt, lemon juice, olive oil, chili flakes, garlic, and black pepper. Mix until creamy and slightly textured.
- Assemble the Bowl: Divide rice or quinoa into bowls. Top with chicken souvlaki, cherry tomatoes, cucumber, red onion, olives, and parsley.
- Finish & Serve: Spoon spicy lemon feta sauce generously over the bowl. Serve immediately with extra lemon wedges if desired.
