  • 3 cups cooked jasmine rice or basmati rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup shredded romaine lettuce
  • 1/2 cup kalamata olives, sliced
  • Extra crumbled feta for garnish
  • Fresh parsley for garnish

Instructions

  1. Step 1: Marinate the Chicken In a large bowl, whisk together olive oil, lemon juice, garlic, red wine vinegar, oregano, paprika, salt, and pepper. Add chicken pieces and toss until fully coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 4 hours for deeper flavor).
  2. Step 2: Cook the Chicken Thread the marinated chicken onto skewers or cook directly in a large skillet or grill pan over medium-high heat. Cook for 8–10 minutes, turning occasionally, until golden brown and cooked through (internal temperature 165°F). Remove from heat and let rest for 5 minutes.
