  • Salt & black pepper, to taste

For the Garlic Feta Sauce

  • 3/4 cup feta cheese, crumbled
  • 1/2 cup Greek yogurt
  • 12 cloves garlic
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Black pepper, to taste

For the Bowls

  • 2 cups cooked rice, quinoa, or couscous
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • Fresh parsley or dill, chopped

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken and toss well. Marinate for at least 20 minutes.
  2. Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook chicken for 8–10 minutes, turning occasionally, until golden and fully cooked.
  3. Make the Garlic Feta Sauce: Blend feta, Greek yogurt, garlic, olive oil, lemon juice, and black pepper until smooth and creamy.
  4. Assemble the Bowls: Add a base of rice or quinoa to bowls. Top with grilled chicken souvlaki, tomatoes, cucumber, and red onion. Drizzle with garlic feta sauce and garnish with fresh herbs. Serve warm.
