For the Chicken Souvlaki
- 1 lb (450 g) chicken breast, cut into cubes
- 3 tbsp olive oil
- Juice of 1 lemon
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp ground cumin
- Salt & black pepper, to taste
For the Garlic Feta Sauce
- 3/4 cup feta cheese, crumbled
- 1/2 cup Greek yogurt
- 1–2 cloves garlic
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Black pepper, to taste
For the Bowls
- 2 cups cooked rice, quinoa, or couscous
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, thinly sliced
- Fresh parsley or dill, chopped
Instructions
- Marinate the Chicken: In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken and toss well. Marinate for at least 20 minutes.
- Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook chicken for 8–10 minutes, turning occasionally, until golden and fully cooked.
- Make the Garlic Feta Sauce: Blend feta, Greek yogurt, garlic, olive oil, lemon juice, and black pepper until smooth and creamy.
- Assemble the Bowls: Add a base of rice or quinoa to bowls. Top with grilled chicken souvlaki, tomatoes, cucumber, and red onion. Drizzle with garlic feta sauce and garnish with fresh herbs. Serve warm.
