  • 1 small garlic clove, minced
  • Black pepper, to taste

Bowls

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup kalamata olives, sliced
  • Fresh parsley or dill, chopped
  • Optional: warm pita bread

Instructions

  1. Marinate the Chicken – In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken and coat well. Marinate for at least 30 minutes, up to 12 hours for deeper flavor.
  2. Cook the Chicken – Grill or pan-sear chicken over medium-high heat for 5–6 minutes per side until golden and fully cooked. Allow chicken to rest for 5 minutes, then slice.
