For the Chicken Souvlaki

- 1/2 tsp ground cumin
- Salt & black pepper to taste
For the Whipped Feta Sauce
- 3/4 cup feta cheese, crumbled
- 1/2 cup Greek yogurt
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 small garlic clove, grated
- Black pepper to taste
For the Bowls
- 3 cups cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, sliced
- Fresh parsley or dill for garnish
Instructions
- Marinate the Chicken: In a large bowl, combine olive oil, lemon zest and juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken, toss to coat, and marinate for at least 30 minutes.
- Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook chicken for 4–5 minutes per side until fully cooked and golden.
- Make the Whipped Feta Sauce: Blend feta, Greek yogurt, olive oil, lemon juice, garlic, and black pepper until smooth and creamy.
- Assemble the Bowls: Create bowls with rice or quinoa base. Top with chicken, tomatoes, cucumber, red onion, and olives.
- Finish and Serve: Drizzle generously with whipped feta sauce, garnish with fresh herbs, and serve warm.
