Ingredients
For the Chicken Souvlaki:
- 1 1/2 lbs boneless, skinless chicken thighs, cut into chunks
- 3 tbsp olive oil
- Juice of 1 lemon
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- Wooden skewers (soaked in water if grilling)
For the Creamy Feta Dip:
- 1 cup crumbled feta cheese
- 1/2 cup plain Greek yogurt
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 small clove garlic, minced
- 1 tbsp fresh dill, chopped
- Black pepper, to taste
For the Grazing Board:
- 4–6 warm pita breads, sliced
- 1 cup cherry tomatoes
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup kalamata olives
- 1 cup hummus
- Fresh parsley or dill for garnish
Instructions
- Step 1: Marinate the Chicken
In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, smoked paprika, salt, and pepper. Add chicken pieces and toss to coat evenly. Cover and marinate for at least 30 minutes (or up to 4 hours in the fridge).
- Step 2: Cook the Souvlaki
Thread marinated chicken onto skewers. Grill over medium-high heat for 10–12 minutes, turning occasionally, until fully cooked and lightly charred (internal temp 165°F / 74°C). Alternatively, cook in a grill pan or bake at 400°F (200°C) for 18–20 minutes.
- Step 3: Prepare the Feta Dip
In a bowl, combine feta, Greek yogurt, olive oil, lemon juice, garlic, dill, and black pepper. Blend or mash until smooth and creamy. Chill until ready to serve.
- Step 4: Assemble the Grazing Board
Arrange grilled chicken skewers in the center of a large serving board. Place small bowls of feta dip and hummus around the chicken. Fill remaining space with warm pita slices, cherry tomatoes, cucumber, red onion, and olives. Garnish with fresh parsley or dill.
