For the Lemon Feta Dip

  • 3/4 cup crumbled feta cheese
  • 1/3 cup Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp lemon zest
  • 12 tbsp warm water (to thin if needed)

For the Grazing Board

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup kalamata olives
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup roasted red peppers
  • 46 pita breads or flatbreads, warmed
  • Optional: fresh parsley or dill for garnish

Instructions

  1. Marinate the Chicken – In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken and toss to coat. Cover and marinate for 30 minutes up to 4 hours for deeper flavor.
  2. Cook the Chicken – Heat a skillet or grill pan over medium-high heat. Thread chicken onto skewers or cook directly in the pan. Cook 4–5 minutes per side until golden and fully cooked. Let rest for 5 minutes before serving.
  3. Prepare the Lemon Feta Dip – In a bowl, combine feta, Greek yogurt, olive oil, lemon juice, and lemon zest. Whisk or blend until smooth and creamy. Gradually add warm water to reach desired consistency.
  4. Assemble the Grazing Board – Arrange cooked chicken, cherry tomatoes, cucumber, olives, red onion, roasted red peppers, and pita bread on a large serving board. Place the lemon feta dip in a small bowl at the center. Garnish with fresh parsley or dill if desired.
