Lemon Beef:
- 1 lb (450g) flank steak or sirloin, thinly sliced
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1 teaspoon lemon zest
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Creamy Dill Feta Sauce:
- 1/2 cup crumbled feta cheese
- 1/3 cup plain Greek yogurt
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon olive oil
- 1–2 tablespoons warm water (to thin as needed)
- 1/4 teaspoon black pepper
For Assembly:
- 4 large soft pita breads
- 1 cup shredded lettuce
- 1/2 cup cherry tomatoes, halved
- 1/2 cup diced cucumber
- 1/4 cup thinly sliced red onion
- Fresh parsley for garnish
Instructions
- Marinate & Cook the Beef: In a bowl, combine olive oil, lemon juice, lemon zest, garlic, oregano, smoked paprika, salt, and black pepper. Toss beef slices in the marinade and let sit for 15–20 minutes. Heat a skillet over medium-high heat. Cook beef for 3–4 minutes until browned and cooked to your preferred doneness. Remove from heat and let rest.
- Make the Creamy Dill Feta Sauce: Combine feta, Greek yogurt, dill, lemon juice, lemon zest, olive oil, and black pepper. Mix until smooth, gradually adding warm water to reach desired consistency.
- Warm the Pitas: Heat pita breads in a skillet or oven until soft.
- Assemble the Wraps: Spread sauce inside each pita, top with lemon beef, lettuce, tomatoes, cucumber, and red onion.
- Serve: Fold wraps, garnish with parsley, and serve warm.
