For the Chicken & Potatoes
- 2 lb (900 g) bone-in, skin-on chicken thighs or drumsticks
- 2 lb (900 g) Yukon gold or baby potatoes, wedges
- 1/3 cup olive oil
- 1/3 cup fresh lemon juice
- Zest of 1 lemon
- 5 cloves garlic, minced
- 1 1/2 tsp dried oregano
- 1 tsp paprika
- 3/4 tsp salt (or to taste)
- 1/2 tsp black pepper

- Fresh parsley, chopped
- Lemon wedges
Instructions
- Preheat the Oven: Preheat oven to 400°F (200°C).
- Prepare the Marinade: In a bowl, whisk olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and black pepper.
- Assemble the Tray: Arrange chicken and potato wedges in a large roasting pan or baking dish. Pour marinade over everything and toss well to coat evenly. Spread into a single layer.
- Roast: Roast uncovered for 50–60 minutes, turning potatoes once and basting chicken halfway through, until chicken is golden and crispy and potatoes are tender with caramelized edges.
- Finish & Serve: Optional: broil for 3–5 minutes for extra crisp skin. Garnish with fresh parsley and serve with lemon wedges.
