For the Base

  • 1 1/2 cups cooked rice or quinoa

  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp fresh parsley, chopped

For the Creamy Feta Sauce

  • 3/4 cup feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 tsp black pepper

Instructions

  1. Prepare the Chicken: In a bowl, mix olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and black pepper. Add chicken and toss to coat. Cook chicken in a skillet over medium-high heat for 5–6 minutes until golden and fully cooked.
  2. Make the Creamy Feta Sauce: In a blender or food processor, combine feta cheese, Greek yogurt, olive oil, lemon juice, and black pepper. Blend until smooth.
  3. Assemble the Bowls: Divide rice or quinoa into bowls. Top with lemon chicken, cucumber, cherry tomatoes, red onion, and parsley. Drizzle with creamy feta sauce. Serve immediately.
