For the Shrimp:
- 1 lb (450 g) large shrimp, peeled and deveined
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- Juice of 1/2 lemon
For the Charred Onion Feta Sauce:
- 1 small red onion, sliced
- 1 tbsp olive oil
- 1/2 cup crumbled feta cheese
- 2 tbsp Greek yogurt
- 1 tsp lemon juice
- Salt & pepper, to taste
For the Gyros:
- 4 pita breads or flatbreads
- 1 cup shredded lettuce
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, thinly sliced
- 2 tbsp chopped fresh parsley
Instructions
- Cook the Shrimp: In a bowl, toss shrimp with olive oil, garlic, oregano, paprika, salt, pepper, and lemon juice. Heat a skillet over medium-high heat and cook shrimp 2–3 minutes per side until pink and opaque.
- Make the Charred Onion Feta Sauce: Heat olive oil in a skillet over medium-high heat. Add sliced onion and cook 5–6 minutes until softened and lightly charred. Transfer onion to a blender and add feta, Greek yogurt, lemon juice, salt, and pepper. Blend until smooth and creamy.
- Assemble the Gyros: Warm pita breads slightly. Spread a generous layer of charred onion feta sauce on each pita. Top with shredded lettuce, cherry tomatoes, cucumber, and cooked shrimp. Drizzle additional sauce on top and sprinkle with fresh parsley. Fold and serve immediately.
