For the Turkey:
- 1 lb (450 g) ground turkey
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
For the Bowl:
- 1 cup cooked quinoa or rice
- 1 cup chopped cucumber
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup shredded lettuce
- 1/4 cup kalamata olives, sliced
- 2 tbsp fresh parsley, chopped
For the Spicy Lemon Garlic Feta Sauce:
- 1/2 cup feta cheese, crumbled
- 1 clove roasted garlic
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1/2 tsp red pepper flakes (adjust to taste)
- Salt & pepper, to taste
Instructions
- Cook the Turkey: Heat olive oil in a skillet over medium heat. Add garlic, oregano, paprika, salt, and pepper. Sauté for 1 minute. Add ground turkey and cook until browned and fully cooked, about 6–8 minutes.
- Make the Spicy Lemon Garlic Feta Sauce: Blend feta, roasted garlic, lemon juice, olive oil, red pepper flakes, salt, and pepper until smooth.
- Assemble the Gyro Bowl: Place cooked quinoa or rice as the base of each bowl. Top with lettuce, cucumber, tomatoes, red onion, and olives. Add cooked turkey on top. Drizzle generously with spicy lemon garlic feta sauce. Garnish with fresh parsley and serve immediately.
