  • 3 cups broccoli florets
  • 1 tbsp olive oil
  • Salt & pepper, to taste

For the Creamy Garlic Sauce:

  • 1/2 cup Greek yogurt or sour cream
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt & pepper, to taste

For Serving:

  • 2 cups cooked rice, quinoa, or cauliflower rice
  • Optional garnish: chopped parsley or green onions

Instructions

  1. Grill the Chicken: Preheat grill or grill pan to medium-high heat. Brush chicken with olive oil and season with garlic powder, paprika, salt, and pepper. Grill 5–6 minutes per side until cooked through (internal temperature 165°F / 74°C). Slice into strips.
  2. Cook the Broccoli: Toss broccoli florets with olive oil, salt, and pepper. Roast in oven at 400°F (200°C) for 12–15 minutes until tender-crisp, or steam until bright green and just tender.
  3. Make the Creamy Garlic Sauce: In a small bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, salt, and pepper. Stir until smooth and creamy. Adjust seasoning to taste.
  4. Assemble the Bowls: Divide rice or grain base among serving bowls. Top with grilled chicken strips and roasted broccoli. Drizzle with creamy garlic sauce. Garnish with parsley or green onions if desired.
