Grilled Chicken:

- Juice of 1/2 lemon
Broccoli:
- 3 cups broccoli florets
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
Creamy Garlic Sauce:
- 1/2 cup Greek yogurt
- 2 tbsp mayonnaise
- 2 cloves garlic, finely minced or grated
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
Bowl Base:
- 2 cups cooked rice (white, brown, or jasmine)
- 1 tbsp olive oil
- Optional: chopped parsley or red pepper flakes for garnish
Instructions
- Marinate & Grill the Chicken: In a bowl, mix olive oil, garlic, paprika, oregano, salt, pepper, and lemon juice. Coat the chicken evenly and let marinate for at least 20 minutes (or up to 2 hours). Preheat grill or grill pan to medium-high heat. Grill chicken 5–7 minutes per side until fully cooked (internal temperature 165°F / 75°C). Let rest 5 minutes, then slice.
- Cook the Broccoli: Toss broccoli florets with olive oil, salt, and pepper. Roast at 400°F (200°C) for 15–18 minutes until tender with slightly crispy edges, or steam for 5–6 minutes if preferred.
- Make the Creamy Garlic Sauce: In a small bowl, whisk together Greek yogurt, mayonnaise, garlic, lemon juice, olive oil, salt, and pepper. Adjust seasoning to taste.
- Assemble the Bowls: Divide warm rice into serving bowls and drizzle lightly with olive oil. Top with sliced grilled chicken and roasted broccoli. Spoon generous amounts of creamy garlic sauce over the top. Garnish with parsley or red pepper flakes if desired. Serve warm and enjoy.
