- 1 tablespoon olive oil
For the Spicy Ginger-Mango Salsa
- 1 ripe mango, diced
- 1 small red chili, finely chopped (adjust to taste)
- 1 teaspoon fresh ginger, grated
- 1 small red bell pepper, diced
- 1 tablespoon lime juice
- 1 tablespoon fresh cilantro, chopped
- Pinch of salt
For the Tacos
- 4 small flour or corn tortillas
- 1/2 cup shredded red cabbage
- 1/2 avocado, sliced
- Lime wedges, for serving
Instructions
- Step 1: Prepare the Salsa – In a medium bowl, combine diced mango, red chili, grated ginger, red bell pepper, lime juice, cilantro, and salt. Mix gently and set aside.
- Step 2: Grill the Halloumi – Preheat a grill pan or nonstick skillet over medium heat. Brush halloumi slices with olive oil and grill 2–3 minutes per side until golden and slightly charred. Remove from heat.
- Step 3: Warm the Tortillas – Warm tortillas in a dry skillet or microwave until pliable.
- Step 4: Assemble the Tacos – Place a few slices of grilled halloumi on each tortilla. Top with shredded cabbage, avocado slices, and a generous spoonful of spicy ginger-mango salsa.
- Step 5: Serve – Garnish with lime wedges and extra cilantro if desired. Serve immediately while halloumi is warm.
