Ingredients

Units Scale

For the Lamb Chops

  • 4 lamb chops
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon rosemary, chopped
  • 1 teaspoon thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon balsamic vinegar

For the Mashed Potatoes

  • 3 large russet potatoes, peeled and cubed
  • 1/2 cup whole milk
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

For the Lamb Chops

  1. Marinate: Coat lamb chops with olive oil, garlic, rosemary, thyme, salt, pepper, and balsamic vinegar. Let sit for 30 minutes.
  2. Grill: Heat a grill or pan over medium-high heat. Cook lamb chops for 3-4 minutes per side for medium-rare or longer for desired doneness.
  3. Rest & Serve: Let rest for 5 minutes before serving.

For the Mashed Potatoes

  1. Boil Potatoes: Cook cubed potatoes in boiling salted water until fork-tender (about 15 minutes).
  2. Mash & Mix: Drain, mash, and mix in milk, butter, salt, and pepper. Stir until smooth.
  3. Serve: Plate lamb chops with a generous serving of mashed potatoes and enjoy!

Notes

  • For extra creamy mashed potatoes, use heavy cream instead of milk.
  • Add a drizzle of garlic butter over the lamb for extra richness.
  • Let lamb rest before serving to keep juices locked in.
