For the Lamb Chops

- 1 tablespoon balsamic vinegar
For the Mashed Potatoes
- 3 large russet potatoes, peeled and cubed
- 1/2 cup whole milk
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
For the Lamb Chops
- Marinate: Coat lamb chops with olive oil, garlic, rosemary, thyme, salt, pepper, and balsamic vinegar. Let sit for 30 minutes.
- Grill: Heat a grill or pan over medium-high heat. Cook lamb chops for 3-4 minutes per side for medium-rare or longer for desired doneness.
- Rest & Serve: Let rest for 5 minutes before serving.
For the Mashed Potatoes
- Boil Potatoes: Cook cubed potatoes in boiling salted water until fork-tender (about 15 minutes).
- Mash & Mix: Drain, mash, and mix in milk, butter, salt, and pepper. Stir until smooth.
