For the Watermelon:
- 2 large watermelon slices (cut into thick “steaks”)
- 2 tbsp olive oil
- 1 tsp balsamic vinegar

- 1 tbsp olive oil
- 1/2 tsp dried oregano
- Pinch of chili flakes (optional)
For the Balsamic Pearls:
- 1/2 cup balsamic vinegar
- 1–2 tsp honey
- 1/2 tsp agar-agar powder
- Cold vegetable oil (for spherification method)
Garnish:
- Fresh mint or basil leaves
- Cracked black pepper
- Extra balsamic glaze (optional)
Instructions
- Prepare the Balsamic Pearls – Chill a glass of vegetable oil in the freezer for about 30 minutes. In a small saucepan, heat balsamic vinegar with honey. Whisk in agar-agar and simmer for 1–2 minutes. Using a dropper or spoon, drip the mixture into the cold oil to form pearls. Strain and rinse pearls gently. Set aside.
- Grill the Watermelon – Brush watermelon steaks with olive oil and a little balsamic vinegar. Season lightly with salt and pepper. Grill on a hot grill or pan for 2–3 minutes per side until grill marks appear and texture firms slightly.
- Warm the Feta – In a small pan, heat olive oil and gently warm feta slices. Sprinkle with oregano and chili flakes, cooking just until slightly softened (not fully melted).
- Assemble the Dish – Place grilled watermelon steaks on a serving plate. Top with warm feta.
- Finish & Serve – Spoon balsamic pearls over the top. Garnish with fresh herbs, cracked black pepper, and a drizzle of balsamic glaze if desired. Serve immediately for a unique sweet-savory experience.
