  • 1 tsp salt

For the Creamy Tzatziki Drizzle

  • 1/2 cup plain Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 small garlic clove, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp olive oil
  • 1 tbsp fresh dill, chopped
  • Salt and black pepper, to taste

For the Bowls

  • 2 cups cooked rice, quinoa, or couscous
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup kalamata olives, sliced
  • Fresh parsley or dill, chopped
  • Optional: warm pita bread

Instructions

  1. Marinate the Chicken In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken, coat well, and marinate for at least 30 minutes (up to 12 hours for maximum flavor).
  2. Cook the Chicken Grill or pan-sear the chicken over medium-high heat for 5–6 minutes per side until golden and fully cooked. Allow chicken to rest for 5 minutes, then slice thinly.
  3. Prepare the Creamy Tzatziki Drizzle In a small bowl, mix Greek yogurt, drained cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper until smooth. Adjust seasoning to taste.
  4. Assemble the Bowls Layer rice, quinoa, or couscous as the base. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and olives. Drizzle generously with creamy tzatziki and sprinkle fresh herbs on top. Serve with pita if desired.
